Recipe: Sweet Potato & Pistachio Collagen Pancakes
Serves 2
Ingredients

1 small, sweet potato

2 organic eggs
-
4 tbsp tapioca (cassava flour)

4 tbsp ground almonds
-
1 tsp baking powder
-
½ tsp bicarbonate of soda

1 scoop Planet Paleo Marine or Bovine Collagen Powder
To serve (optional):
Frozen blueberries, chopped pistachios, coconut kefir, and a drizzle of raw honey.
Method

Steam the sweet potato until soft, then allow it to cool.

Add the sweet potato to a blender with the remaining batter ingredients and blend until smooth.

Heat a non-stick pan over medium heat. Spoon around 2 tablespoons of batter per pancake into the pan, then scatter a few blueberries and pistachios on top.

Cook until bubbles appear on the surface, then flip and cook until the pancake feels firm when gently pressed.

Repeat with the remaining batter. Serve warm with your chosen toppings.
